Chicken Adobo

Oh so simple to make! Try it out in your kitchen and enjoy!



Everyone's favorite at any Filipino get together. NO party is party without Chicken Adobo. It is a Filipino comfort food that can be prepared easily and eaten at any time of the day.


Every time I eat this dish, it takes me back to Hawaii where I grew up. This is the first dish I go for and put it on top of my rice with extra gravy before I put anything else on my plate. The extra sauce mixed in with the other food make everything better. Oh soooo good! My Mom used to make it a little bit salty, and at the time I did not care. But Today, with a few tweak, I made the Ultimately Perfect Chicken Adobo that anyone and everyone can enjoy. So, give this recipe a try and it will be perfect every time.


ULTIMATE CHICKEN ADOBO


Ingredients :


2 to 2 ½ lbs Chicken (2 Leg Quarters, cut to bite size)

½ medium Onion (chopped)

5 cloves of Garlic (diced)

5 Bay Leaves

1 tbs of Whole black peppercorn (crushed is okay)

½ cup of Soy Sauce

¼ cup of Apple Cider Vinegar

2 tbs of Dark Soy Sauce (optional, this is just to add color to the chicken)

2-3 tbs of vegetable cooking oil

1 tbs of chicken fat (chopped small, 1/4 inch cube, optional)


1. Preheat Pot to medium to medium high heat.

2. Add a little vegetable cooking oil, then add the chicken fat (optional)

3. Saute the Garlic to slightly golden brown

4. Add the chopped Onions and saute until tender

5. Add the Chicken and brown both sides about 3 min on each side.

6. Pour the Soy Sauce, Apple Cider Vinegar, black peppercorn and bay leaves

7. Cover and Simmer at medium heat for about 35 to 40 minutes, checking occasionally and turning the chicken to make sure you don’t burn it. ( at this point, you can add the dark soy sauce for color)

8. After about 40 min, turn down the heat to low, the chicken should be ready for the next step.

9. In a separate frying pan, heated at high, sear the cooked chicken just to give it a little char. just don't break up the chicken.

10. With a colander, drain the gravy from the pot into a bowl and add to the chicken in the frying pan. If you like the garlic and onions and bay leaves add that too.

11. Turn off heat and put in serving Platter and Serve.

12. Eat it with Rice. ENJOY!
