Loco Moco Island Style

Loco Moco (loh-koh moh-koh) is one of Hawaii’s original homemade fast food and can be found all thru-out the islands. The perfect meal after boogie boarding. Zippy’s , Burgerland, Rainbow Drive In are just a few of my favorite places to eat, where they serve local grinds and of course, Loco Moco. Over the years that I made this dish, I finally settled on the one that I like the most, my version. Lots of flavor and very filling, make you wanna say “broke the mouth.”



LOCO MOCO


Ingredients :


2 lbs Ground Beef

½ of Large Onion (minced)

Salt and Pepper to taste


Gravy:

Few cloves of Garlic (minced)

½ of Large Onion (Chopped)

8 Mushrooms (sliced)

Salt and Pepper to taste

1 tbs of Flour

½ to 1 cup of Water

1 cube of Beef Boullion

4 eggs (fried over easy)

Cooked rice


1. In a bowl, combine the ground beef, onion, salt and pepper and hand mix thoroughly.

2. After mixing, make 4 equal parts and form a ball of meatball

3. Heat the pan to medium high, add a little oil and pan fry 2 ball of meatballs and flattened with a spatula. (or form a patty with a indentation or a hole in the center of the patty before frying)

4. Lower the heat to medium to not burn the patty.

Cook until brown for about 3 - 5 mins and turn over. Once brown on both sides, place in a plate.

5. On the same pan, add garlic until brown, and add the onion, saute til tender, then add the mushroom saute until soft. Season with a pinch of salt and black pepper to taste.

6. In a small bowl, crush the beef boullion in the water. Pour it in the pan and mix, meanwhile dissolve the flour in bowl of water and add to the sauce. Stir the mixture well with the mushroom, until it thickens and forms a nice brown gravy.

7. Add a little more water if necessary so that the gravy is not too thick, but just right.

8. When gravy is done, remove from heat and set aside.

9. In another pan, cook the egg over easy to be added as a final layer of the loco moco.

10. Now you are ready for plating. Put a mound of cooked rice on a plate or bowl, then place the cooked patty on top, then smother the patty with mushroom gravy and top it with the over easy egg. If you have some furikake (crushed seaweed mixture seasoning), sprinkle a little on top of the egg.

11. Eat and be happy.
