Shoyu Chicken is a popular Hawaiian dish. Easy to make and is often served with rice. Who are we kidding? Most Hawaiian dish is served with rice. We love our rice. Shoyu is Japanese for soy sauce. Hence shoyu chicken means soy sauce chicken. This dish is so simple anybody can make it, it is almost a "set it and forget it" dish, except don't forget about it because it might burn the house down. You gotta turn off the heat when it's done cooking.

Ingredients:
6 - 7 boneless/skinless chicken thigh meat
1/2 cup Sugar
1/2 cup Soy Sauce (Shoyu)
few cloves of Garlic (smashed)
1 inch piece of ginger (sliced)
The recipe is pretty flexible. You can use chicken thighs with skin and bones if you like. That's how traditional shoyu chicken is cooked. Can't go wrong either way. If you love garlic, put more. If you want the chicken to appear darker, add a tablespoon of dark soy sauce, as it will not make it any saltier, but perhaps a tad sweeter. Have fun with it. Enjoy!
1. Place the chicken in the Pot
2. Mix the soy sauce, sugar, garlic and ginger in a bowl, so it is less messy.
3. Pour over the chicken, give it a quick stir. Turn on stove at high heat and cover.
4. Let it simmer for about 35 minutes, occationally turning to assure its cooked on both sides. (if using chicken with bones, cook for about 35 to 40 minutes)
5. When done, scoop a couple of pieces on top of rice, add extra gravy. Eat with a side dish of your favorite vegetables or Macaroni salad.
